Thanks to my very evil sweet friend, Katy, for sending me this fabulous recipe for Oreo Cheesecake Cupcakes that she came across over at Tasty Kitchen. If you haven't added Tasty Kitchen to your favorites list, DO IT NOW! So many wonderful recipes in one place... another great creation by The Pioneer Woman!
Being as how it's against my raisin' to actually follow a recipe, I had to shake things up a bit and use my latest addiction, Cool Mint Creme Oreos, instead of the traditional ones. They taste just like Girl Scout Thin Mints...Pure Heaven! I also used Kahlua instead of vanilla and added a mint chocolate Kiss to the top, for a little extra decadence!
The original recipe says it makes 24 cupcakes, but I only managed to get 18. I think I better hurry and open the windows and turn on the fans to get the yummy smell out of the house before Coach and the kids get home. I want there to be no evidence of my divine creation. I plan to hide all 18 16 on the highest shelf and keep them for my own!

Isn't Tasty Kitchen the bomb? I've deleted all my other cooking sites and kept just this one. Cuts out all the searching, cuz everything is right there!
Ok...going to get stuff today to make it. I've got LSU fans coming over this weekend for big game.
Thanks j & katy...for giving me even more poundage!
Oh GAWD, I think I gained weight just looking at your photos. You are eeeeeeeeeeeevil...
Ok now I want not only your cupcakes but someone to post me cool mint oreos!! ARGH. I wish I was american! I am LOVING the blog btw Crawbabes - I'm collecting old crayons so we can make the melted crayon pics - you're such a cool mama! Inspiring me!
First off, thanks for introducing me to the Cool Mint Creme Oreos, which will now be referred to as crack. I love me some thin mints and now I don't have to wait all year. I bought both types of Oreos last night and am set to make some of these cupcakes this weekend, if the cookies last that long. Thanks for the post. My thighs will thank you for the extra 10 miles they have to run to work it off :)
